Say hello to your new morning obsession! Inspired by the viral strawberry matcha latte, this vibrant breakfast version combines the antioxidant power of matcha with juicy strawberries for a naturally energizing start to the day. Packed with fiber, healthy fats with coconut yogurt, and free from dairy or refined sugar, this one is a meal prep star! For a vegan option, simply swap the honey for maple syrup. 

Time to cook: Overnight + 15 minutes
Serves: 2-4

Ingredients:

For the overnight oats:

  • 50g (½ cup) quick oats
  • 12g (1 tbsp) chia seeds
  • 4g matcha powder
  • 30g (2 tbsps) maple syrup/honey
  • 240g (1 cup) water
  • 120g (½ cup) coconut yogurt (optional) 

For the strawberry compote:

  • 250g frozen strawberries
  • 30g (2 tbsp) honey
  • 240g (1 cup) water
  • Toasted coconut, to serve 

Method:

Mix the oats, chia seeds and matcha powder together with the water in a bowl or mason jars. Add honey or maple syrup, and set aside in the fridge overnight.

For the compote, bring the strawberries, water, and honey to a gentle simmer until soft and reduced by half. Stir every few minutes and mash the strawberries until thick and jammy. Refrigerate. Note: This stores in the fridge for up to 5 days and is perfect with muesli, yogurt, or cottage cheese toast. 

To assemble, top the matcha oats with coconut yogurt, strawberry compote, and a sprinkle of toasted coconut.
