When I’m short on time but want something nourishing and delicious, toasties are my go-to. You can whip them up in minutes, and they’re brimming with the nutrients your body loves like quality protein and healthful fats.
Whether it’s for breakfast, lunch, or dinner, toasties offer a satisfying boost when life gets busy. You can keep it simple, or get creative with whatever ingredients you have on hand.

1. Creamy Tuna Toastie
Who doesn’t love a perfectly crispy, golden toastie! This one is high-protein and so easy to prepare. Simply mix omega-3 rich tuna with mustard, crunchy celery, red onion, and pickles for a refreshing bite! Add your tuna mix atop crusty sourdough and top with melty mozzarella.
Ingredients:
- 95g (3.3oz) tin tuna, drained
- 1 tbsp red onion, finely chopped
- 1 celery stalk, diced
- 1 tbsp greek yoghurt
- 1 tsp dijon mustard
- 1 pickle, finely diced
- 1 tbsp chopped chives
- 2 slices sourdough bread, or bread of choice
- 2 slices mozzarella cheese, or cheese of choice
Method:
Combine all of the ingredients, except for the cheese and bread, in a small bowl. Season to taste with sea salt and black pepper. Mix until well combined. If your mixture looks a little dry, add an extra dollop of Greek yoghurt.
Spread the tuna mix onto one of the slices of bread. Add the cheese on top and then place the other slice of bread on top. We added a little bit of butter on top of the bread to create a golden crunch.
Toast in a sandwich press for 4-5 minutes or until golden brown.
Slice in half and serve.
2. Chicken Pesto Toastie
This one is a delicious blend of protein, healthful fats, and gut-loving fiber, all wrapped in crispy, golden sourdough! Tender chicken provides a satiating energy boost, while creamy avocado delivers heart-healthy fats. We’ve added juicy tomato and peppery rocket for freshness. Finished with pesto, this is a delicious quick lunch packed with flavour in every bite.
Ingredients:
- 2 slices sourdough, or bread of choice
- 1 tbsp pesto, we used one heaped tbsp
- ¼ avocado, smashed
- ½ tomato, sliced, we used a roma tomato
- 50g (1.7oz) mozzarella cheese, 2 slices
- 50g (1.7oz) cooked chicken
- Handful of rocket
Method:
Spread the pesto onto one slice of toast. Spread the smashed avocado onto the other slice and season with sea salt.
Layer the tomato slice and cheese slices onto the pesto slice. Season with black pepper. Place the chicken on top, followed by some rocket leaves.
Place the other piece of bread on top, avocado side down.
Toast in a sandwich press for 4-5 minutes or until golden brown.
Slice in half and serve.
3. Caprese Toastie
Elevate your lunches with this delightful Caprese Toastie, bursting with the flavours of a European summer. Enjoy the simplicity of sweet tomatoes, fresh basil, and mozzarella — all melding together in a crispy, golden delight. For those who love greens, you could also add some rocket or baby spinach to this toastie.
Ingredients:
- 2 slices sourdough, or bread of choice
- 1 tbsp pesto, we used one heaped tbsp
- 50g (1.7oz) mozzarella cheese, 2 slices
- ½ tomato, sliced, we used a roma tomato
- 5 basil leaves
- 1 tsp balsamic glaze
Method:
Spread the pesto onto both pieces of bread.
Layer on the cheese and tomato slices. Season with sea salt and black pepper. Place a few basil leaves on top and finish with some balsamic glaze.
Place the other piece of bread on top, pesto side down.
Toast in a sandwich press for 4-5 minutes or until golden brown.
Slice in half and serve.
